Banana Bread
Ingredients
1 c sugar
1/3 c butter
2 eggs
4 medium bananas (ripe, well darkened)
1/3 c water
1.66 c flour
1 t baking soda
1/2 t salt
1/4 baking powder
1 cup walnuts (rough chop)
Directions

Preheat oven to 350.

Spray 4 mini loaf pans (or a large loaf pan if minis not available) with non-stick spray.

Mix sugar and butter until smooth.

Add eggs and mix until well blended.

Add bananas and water and mix until blended.

Beat mixture at medium speed for 30 seconds.

Stir in remaining ingredients (except walnuts) just until moistened.

Stir in nuts.

Pour batter evenly into 4 min loaf pans.

Bake for 35-40 minutes (until toothpick come out clean). Up to 1 hour for large loaf pan.

Remove from oven and use a butter knife to loosen edges.

Dump onto wire rack and allow to cool for 5-10 minutes before slicing.
